After watching a gal make grilled cheese sandwiches this morning on The Nate Berkus Show I've decided I make very boring grilled cheese sandwiches. Really boring. But good.
Anyway she was sharing her recipes for tomato soup and grilled cheese sandwiches. The soup sounded good and sparked my dinner plans. The sandwich was interesting, but I just kept thinking that a GC sandwich has enough calories as it is. She loaded that sandwich...a sweetened cranberry jam, ham, cheese, a mayo/mustard sauce. Then, she dipped it in an egg wash made with heavy cream and grilled it in butter. Oh, my.
So, what's your technique for making a grilled cheese sandwich? I use whole grain bread, slap a couple slices of medim cheddar or swiss cheese on the bread, spread the outter side of the sandwhich with a little butter and grill it. Simple, boring, but yummy. I always serve it with dill pickles.
Once when I felt adventuresome I added peanut butter with the cheddar cheese...it was pretty good, but I don't like to mess with a good thing. lol.
Tell us how you make a grilled cheese. And, what's your most creative grilled cheese sandwich?

Message: I use my homemade graham bread (whole grain), cheddar cheese and a heavy dose of French's mustard on both slices of the bread. If I want to pretend I'm calorie conscious, I stick it under the broiler, first without the top slice of bread until the cheese starts to melt and then with the bread. If I don't care about the calories (which is usual), I nuke a little butter to soften it, spread it on the bread, and grill the sandwich on the stove top. The imperative thing for me is that the cheese be oozy. I can't stand half-melted grilled cheese sandwiches.

Message: I make mine like you do down to the bread. I will use either American, Swiss, Cheddar, or Pepper Jack depending on my mood. I have a recipe for a ''grown up grilled cheese'' on my Pinterest site, but I haven't even looked at it yet. I can tell you I wouldn't make the one you saw today. WAY too much trouble for lunch. And that's when we have sandwiches.
I do white Italian bread with either american, cheddar or pepper jack, depending on what I'm in the mood for and/or what's in the fridge. Spread a little butter on the outside and pan toast.
Someone I know swears by putting a little mayo on the outside instead of butter. Someday, I will try it.
I have made grilled ham & cheese and grilled cheese & tomato on occasion too. I like the sandwich with a pickle, not a big fan of tomato soup.

Message: The closest I ever come to a grilled cheese sandwich is putting one piece of bread in the toaster oven with a piece of swiss cheese on top. I kind of remember eating real ones back in the day and ripping the top of my mouth to shreds on the toast. LOL.
